
Last week we were relaxing at home after work and I didn't feel like cooking a time-consuming meal, but we've been trying to incorporate more and more nutrient dense foods into our diet. The August issue of Real Simple came and instead of reading it right away, I put it on my coffee table for the weekend. However, that particular weeknight, just seeing the cover made me really crave that dish. It's one of the few times that I simply saw a photo of a dish, without reading the ingredients, that I felt compelled to make it.

The recipe is for linguine and summer vegetables topped with goat cheese. I only substituted a few ingredients for what we had in the pantry like whole grain spaghetti for linguine, and vine tomatoes for grape tomatoes. All of the vegetables were perfect for a fresh and light summer dinner. I even had a glass of light-bodied red wine with it, because let's face it, I'll take red wine over white wine any day. It was so easy, quick, and deliciously fresh. I made enough for left-overs and I've happily had some for lunch all weekend.

Last night I had dinner and drinks with a friend downtown, a friend that worked with me at the museum and now does marketing for a catering company. It's always so nice to get a dose of a great friend, a great drink, and an even greater conversation. We chatted about our summers, how it's nearly over, and even brainstormed marketing techniques. I'm so proud to have such equally intelligent and fun women surround me. It's night like these that summer is made for, plus light dishes at home, and cold drinks on a hot day in the water. I have to say, this is one of the first summers that I'm actually embracing all that the heat and everything that comes with it.

ReplyDeleteSummer pastas are my absolute favorite. We made one last week of heirloom cherry tomatoes, orecchiette, and ricotta salata, and one this weekend of linguine, baked cherry tomatoes, and crispy pancetta. This one might have to make its way into our repertoire! Looks delish. And yeah, there is nothing better than good drinks with a good friend. xo

ReplyDeleteoh yummy. this look so good. we made a rice pasta dish similar to this the other night and let me say rice spaghetti noodles are not the same! the penne, macaroni and the like are good (enough) but apparently not the spag noodles, i am not even going to try linguini ones.
