Sunday Brunch

The weekends are time for us to relax, a time to pretend that the responsibilities of the week have fallen by the waist side for just a moment. To take advantage of this, we sleep in on Sundays (9 AM is sleeping in for me) and each breakfast foods closer to lunch time. Ever since we got our cast iron skillet, it's been a pleasure to start breakfast on the stove top and finish it in the oven. We often use this day to utilize any food in the fridge that may be expiring soon. Leftover arugula, some peppers, and even cheese we need to eat ends up in a skillet of color. We also stole Jamie Oliver's trick of cracking an egg on top of it all and letting it slowly cook that that every serving gets a bit of egg.
